But what exactly is chicken confit? 🍗
It's a French technique where chicken is slowly cooked in aromatic oil at a low temperature until it becomes tender and flavorful. It's so simple, as the oven does most of the work for you.

Preparation process

  1. Preheat the oven to 150°C.

  2. In a low, oven-safe (preferably cast-iron) dish, arrange the chicken legs seasoned with salt and pepper.

  3. Add the garlic, shallots, carrots, and potatoes, cut in half.

  4. Place lemon slices over the top and season everything again with salt, pepper, and rosemary. Everything we add to the dish will flavor the oil, so feel free to play around with the flavors.

  5. Pour olive oil over everything, enough to almost cover the chicken legs, leaving the vegetables sticking out a little. The chicken will also release some fat, so the oil level will rise.

  6. Bake uncovered for about 2 hours.

  7. At the end, remove everything from the oil and strain it carefully. Eat the chicken and vegetables, and store the oil in a clean jar for preserving. You can use it for frying eggs, roasting vegetables, dipping bread, making breadcrumbs, and more.
