Postupak pripreme

Brašno sipajte u činiju i napravite rupu u sredini. U to sipajte kašiku sirćeta, so, ulje i 200 ml vode. Sastojke dobro izmešati, pa lagano nauljenim rukama umesiti glatko testo. Tokom mešanja po potrebi dolivati vode. Mesite testo oko 5 minuta da postane glatko i savitljivo i dobije svilenkasti sjaj. Oblikujte ga u kuglu i stavite na nauljeni tanjir. Površinu testa premažite uljem i prekrijte providnom kuhinjskom folijom. Ostavite da odstoji na sobnoj temperaturi najmanje 40 minuta. Što duže testo miruje, lakše će se razvući.

U velikom tiganju propržite luk dok ne postane staklast. Dodajte mleveno meso, posolite i pobiberite i pržite oko 10 minuta. Pokrijte i ostavite da se fil ohladi.

Testo koje je dugo odmaralo stavite na pobrašnjen stolnjak i nežno ga razvucite. Malo nauljenim rukama polako i pažljivo razvlačite testo, počevši od sredine i nastavljajući postepeno, kružeći oko stola. Odrežite debele ivice. Ako testo u međuvremenu počne da se suši, premažite ga uljem.

Pripremljen fil namazati na tri četvrtine ukupne površine izvučenog testa. Razvaljajte premazano testo tako što ćete prvo uviti bočne ivice. Polako podižite stolnjak ispod testa da se samo umota do kraja. Da biste olakšali, testo možete iseći na nekoliko delova. Rolat pažljivo prebacite u porcije u nauljenu tepsiju i ostatkom testa zakrpite spojeve i eventualne rupe. Po površini rolne rasporedite komadiće putera.

Pecite na 200 °C 40 minuta. Ostavite da se malo ohladi na plehu pre sečenja.
